It’s been a while since my last post mostly because I’ve been crazy busy and a million things are going on and just ahhh
One of the things I had to do was bake 2 dozen cupcakes for my mom’s office party. And I wanted to do something special. I had an idea to make cupcakes based on my favorite girl scout cookie of all time. Samoas! There’s just something so addicting about those chewy caramel and coconut cookies. I’m going crazy just thinking about it!
So i scoured the internet for the perfect recipe. I would have made my own but I only had one night before i had to make these bad boys so i just followed a recipe i found that was basically exactly what i envisioned to make.
The one I used is from Cooking Classy and the moment i saw the pics on there I knew that this was perfect. Vanilla cupcakes with chocolate ganache and caramel buttercream! Topped with toasted coconut and caramel and chocolate drizzled over it! Oh my goodness its just everything I love.
The only tweak i made to the recipe was that I added an extra egg yolk because I like my cupcakes on the moist side and egg yolks will do that for you!

My cupcakes don’t look as good as the picture in the original recipe but hey i never said I was a professional baker! And from what I heard from my mom’s coworkers they were a total hit! So if your food doesn’t look that pretty whatever as long as they taste good!
